摘 要: 研究了10种英国小麦水溶性蛋白在酸性不连续PAGE条件下的电泳特性。结果表明,来自不同小麦品种的水溶性蛋白在实验条件下的电泳图谱存在有明显差异,即不同小麦品种的水溶性蛋白的电泳图谱不同。这就使得用小麦水溶性蛋白作为品种鉴定和遗传纯度分析成为可能。与此同时我们还对小麦水溶性蛋白质在不同溶剂中的行为进行了研究。 The electrophoretic characteristics of water soluble proteins from 10 UKcommon wheat species were studied with polyacrylamide gel electrophoresis technique under acidic discontinuous condition.The result indicated that the PAGE patterns of water-soluble proteins form different wheat varieties were not the same.This made wheat identification and genetic purity analysis by using water soluble proteins possible.Meanwhile,the behavior of water-soluble proteins in different solutions was also investigated.On the basis of the present study and some reports by other authers,the drawbacks of Osborne′s wheat protein classification based on solubility was discussed.
