摘 要: 提出了固态法白酒甑桶蒸馏的模型,用解析法确定了白酒蒸馏过程的操作线;提出了描述甑桶蒸馏过程规律的公式。研究了乙醇在醅层中的分布及在蒸馏过程中的运动规律。 The model of Chinese liquor distillation was put forward; the operation line equation in the process of distillation of Chinese liquor from fixed bed of fermented mass was suggested. The alcohol distributed over the fill and the process of distillation were studied. Some basic formulas for explaining the distillation mechanism of Chinese liquor were established.
