摘 要: 本文报道了从葵花籽中提取抗氧化成分绿原酸和葵花蛋白的方法,讨论了影响提取的各因素。实验证明,葵花籽的乙醇提取物可提高猪油的抗氧化性,也可以增加天然色素的稳定性。 Abstract This paper reports the extraction of antiox-idative component and sunflower protein fromsunflower.The factors which influence the ex-traction of chlorgenic acid and protein from sun-.flower are discussed.It has been proved that theethanol extracts from sunflower is of help to in-crease the antioxidant activity of lard and thestability of natural pigment.
