摘 要: 本文论述了现有文献资料中关于蔗糖成核临界尺寸的各种不同报道及产生差异的原因,在研究过程中引人了溶剂夺水成核的概念和方法,比较合理地设定了晶核形成的初始时刻,并根据一系列试验数据建立了临界晶核尺寸推算公式,为蔗糖结晶的理论研究和过程设计提供了一个新的计算参考依据. In this paper the authors discuss the problemin rgeard to the threshold size of the sucrose nuclei Whose values vary in a great degree according to the publishedliterature because of many reasons. The initial time forming the nuclei can be observedand measured through the new nucleation method by combination of the organic solvent de-water and the ultrasonic wave vibration in this experiment. The varied scopeo f the threshold size (r) of sucrose nuclei at a certain condition can be calculatedbased on the r formula erected in this paper.
