摘 要: 系统地综述了我国特种稻黑米的种质资源、营养成分、药用价值、色素的提取与性质、品质性状的遗传、品种栽培的生理生态及其保健食品的加工利用等方面的研究进展。旨在为挖掘和利用我国珍贵的特种米资源、加强水稻品质育种、推动黑色食品的加工等提供理论依据。 The evaluation and utilization of black pericarp rice inChina were systematically summarized in this papor, which included:(1)Gerrnplasm resources;(2)Nutrition composition;(3 ) Medicine and food therapyfunction;(4)Extraction-sporation condition and traits of black rice pigmemt;(5)Inheritance of quality charac-ters;(6)Physiology and ecology of variteies cuItivation;(7)Black rice health food processing.The aim of this pa-per was to provide the theories for the development and utilization of special rice resource in China,quality improve-Tnent of rice grain,and black rice health food processing.
