摘 要: 介绍了我国奶水牛产业的发展状况,水牛乳的理化、加工特性,水牛乳的加工状况,干酪在我国的发展状况,分析了我国南方发展水牛乳干酪的条件、优势和前景,提出了南方发展水牛乳干酪的设想。 The paper introduces the development of the dairy farming of milch buffalo in China, and the physical, chemical, processing prop- erties and the current processing status of buffalo milk. The paper also describes the development of cheese in China, analyzing the conditions, advantages and prospects of developing buffalo milk cheese in South China. Finally, a scheme of developing buffalo milk cheese is proposed in the paper.
