摘 要: 对大豆蛋白进行选择性酶解改性和超滤,得到改性大豆蛋白.脱脂豆粕经过碱提得到可溶性蛋白溶液,粗蛋白液经过选择性水解、超滤,截留液冷冻干燥得到改性大豆蛋白.研究了大豆蛋白的选择性水解和超滤时膜的操作性能.产物经SDSPAGE分析,表明其成分主要是glycinin的酸性和碱性亚基.蛋白质回收率在80%以上,产品的蛋白质含量大于70%. Modified soybean protein was produced through modification of water extracts of defatted soy flour by se- lective enzymolysis-ultrafiltration·Water extracts of defatted soy flour were hydrolyzed selectively by protease, and then subjected to ultrafiltration for fractionation, modified soy protein was obtained by freezing dry the retentate·The selective hydrolysis of soy protein and the membrane performance were studied·It was proved by SDS-PAGE that the product contained acid and basic subunits of glycinin mainly·The protein yield was above 80%, protein content of the product was more than 70%·
