摘 要: 玉米黄质是玉米胚乳中存在的一种天然类胡萝卜素。大量研究表明它具有预防老年性黄斑病变、白内障;预防心血管疾病、抗癌等功效,近年来玉米黄质以其丰富的原料来源、良好的食用安全性及高效的生理功能在天然功能性食品添加剂和医药保健行业倍受关注。综述了玉米黄质的主要性质、生理功能和制备工艺等。 Zeaxanthin is a natural carotenoid existing in corn embryosperm. Lots of research results showthat zeaxanthin has effi- ciencies like prevention from senile maculopathy, cataracta, cardiovascular diseases and anticancer etc. In recent years, zeaxanthin is especially regarded in the respects of additives for natural functional foods and medicine and health care for its abundant material re- source, good edible safety and highly efficient physiological function. The main properties, physiological functions and preparation process of zeaxanthin were summed up in this paper.
