摘　　要： 研究和分析了啤酒中高级醇的生成和控制措施,主要通过改良酿酒酵母、优化发酵工艺和培养基组成等措施来降低啤酒中的高级醇,达到提高啤酒质量和降低生产成本的目的。 Studying and analyzing on synthesizing higher alcohols in beer and controlling it's measures in the paper. Higher alcohols can be reduced by improving saccharomyces cerevisiae, optimizing fermenting techniques and culture medium, in order to increase beer quality and decrease production cost.
