摘 要: 试验结果表明:淡水石首鱼的含肉率平均为65.95%,鱼肉水分含量为80.45%,干物质中蛋白质含量为16.10%,脂肪为0.507%,粗灰份为1.14%。干物质中氨基酸总量为76.93%,其中必须氨基酸含量占氨基酸总量的40.79%;4种鲜味氨基酸总量为34.80%。 Approximate composition of muscles and dressed fish were determined in Aplodinotus grnniens and compared with other species. It was found that the dressed fish was 65.95%. There were 80.45% of moisture, 16.10% crude protein (in dry matter), 0.507% fat and 1.14% crude ash. The amino acids comprised of 76.93% in total dry weight, the essential amino acids accounting for 40.79% in total amino acids, with 34.80% of four delicious amino acids.
