摘 要: 运用化学修饰方法对枯草芽孢杆菌β甘露聚糖酶活性中心的结构进行了研究。结果表明,除了色氨酸和巯基(Cys)外,羧基(Asp/Glu)和丝氨酸残基亦是该酶活性必需氨基酸残基;尽管组氨酸残基对酶活性的维持有重要作用,但不位于酶的活性中心。 Chemical modification of amino acid side chain groups on β-mannanase from Bacillus subtilis SA-22 were studied. The results indicated that besides thiol groups(Cys) and tryptophan, carboxyl groups(Asp/Glu) and serine residues were essential groups for the catalytic activity; histidine residue was important in maintaining the enzyme activity, but not in the activity side of the enzyme.
