摘　　要： 综述了近年来有关番木瓜采后生理生化、病理生理及果实品质控制和保鲜技术方面进行的研究;重点介绍了采后果实软化过程的生理生化变化、冷害生理、热害生理及番木瓜采后品质控制的新技术。 The progress of postharvest physico-chemical changes ,pathology and storage research of papaya fruit is summarized.The paper emphasizes on the physico-chemical changes during ripening of papaya fruit ,the physiological of chilling injuring and heating injuring and the advanceOn postharvest technology and storage.
