摘 要: 鱼体自溶主要是钙激活蛋白酶和胰蛋白酶共同作用的结 果。低值鱼自溶的最适温度为50℃,最适pH在6-7; 0.009mol的钙离子能促进鱼体自溶作用,氨态氮从 0.324g/100mL增加到0.442g/100mL;0.006mol的锌离子 使蓝园鲹自溶液中氨态氮含量下降8.6%,进一步增加钙、 锌离子的浓度对促进自溶和抑制自溶作用影响都不大。 在内源性蛋白酶的作用下,低值鱼蛋白质利用率较高,达 83.85%,氨基酸转化率较低,为48.8%。 Autolysis of Decapterus maruadsi was caused mainly by trypin and calpain. The optimal condition for autolysis of trash fish is pH6-7 at 50℃. 0.009mol/ L Ca2+ could activate endogenous proteases and 0.006 mol/L Zn2+ inhibited slightly the autolysis of trash fish. The soluble nitrogen index (SNI) ofautolysate Of Decapterus maruadsi is fairly high, Upto 83.85%, however, DH of autolysis of trash fish is only 48.8% , suggesting absence of exopeptidases.
