摘 要: 黄酒是我国历史最悠久的酒种 ,而当前我国黄酒业发展缓慢 ,工业化和现代化程度不高。借鉴啤酒、葡萄酒、日本清酒工业的成功经验 ,应注重原料选育、科学研究、新品种开发、黄酒文化研究、企业联合、标准化建设等 。 Yellow rice wine is the oldest wine in China, but, yellow rice wine industry develop slowly now, Industrialization and modernization of it is also not good. In order to develop our yellow rice wine industry, We should learn the successful experience of beer, grape wine and Japanese sake, from the choice of raw material, scientific research, new products development, yellow rice wine culture research, company cooperation, standardization building and so on.
