摘 要: 国内有不法分子收集餐饮业废油脂,加工后重返食用油市场,严重危害居民健康。文章对餐饮业废油脂的有害成分进行了分析,并找出了其特征指标,可供鉴别餐饮业废油脂和防止废油脂回流饮食市场的管理工作参考。 The paper makes full analysis of deleterious ingredient and general index of waster oil from catering industry. On the basis of it, some characteristic index of waste oil is put forward, which sets a solid foundation to eventually draw out a set of methods to differentiate edible oil from waste oil of catering industry.
