摘 要: 应用超声强化提取过程可有效地提高提取效率 ,缩短提取时间 ,节约成本 ,甚至还可以提高产品的质量和产量。本文论述了超声波与媒质的基本作用及其产生的效应 ,超声提取技术在食品工业中的应用 ,并阐述了超声强化提取的机理 ,指出了该技术所存在的问题和研究方向。 With the enhancement of ultrasound, the extraction e fficiency could be improved with the better quality and yield, the saving of the extraction time, cutting the cost and the improvement of extraction yield. It p re sented the basic interaction between ultrasound and the media through which ultr a sonic wave propagates, the applications of ultrasound in food industry and its p rinciples to enhance the extraction. The problems and research orientation about this technique were pointed out.
