摘 要: 通过正交实验 ,以番木瓜汁为主 ,与一定比例的西番莲汁进行调配 ,筛选出最佳的配方 ,使混合果汁同时具有番木瓜和西番莲水果特有的香气 。 A mixed juice beverage of papaya and passion fruit was mainly studied in the article. The optimum formula was obtained through orthogonal experiments by mixing papaya juice and passion fruit juice at a certain ratio. The beverage was featured by the fragrance of both the fruits. In addition, the stability of the beverage was studied by adding an appropriate amount of stabilizers to it.
