摘 要: 对草鱼脆化前后的肌肉营养成分及其红细胞中葡萄糖-6-磷酸脱氢酶(G6PD)含量进行了测定,结果表明:草鱼脆化养殖后,其肌肉中其他一些营养成分的含量与脆化养殖前基本一致,但粗脂肪和红细胞中G6PD的含量较脆化养殖前明显减少,G6PD差异也达极显著(P<0.01)水平,这说明不同的养殖方式对草鱼的组织化学组成有影响. A breeding of making grass crap's meat crisp to the taste was curried out. From the beginning to the end, the content of the nutrient composition in grass crap' s muscle and the glucose-6-phosphode-hydrogenase in its erythrocyte was determined. The results showed that after the breeding of making its meat crisp to the taste, although the content of the other nutrient composition in its muscle was on the whole similar to that of the previous, the content of the crude fat, and the glucose-6-phosphodehydrogenase in erythrocyte obviously decreased, compared with the previous; and there was also a significant difference ( P < 0.01) in the content of glucose-6-phosphodehydrogenase. So this indicated that the different way of breeding had an effect on the chemical composition of grass crap' s tissus.
