摘 要: 围绕凝胶多糖的结构、特性、生物合成途径、菌种选育诱变、以及凝胶多糖的提取和纯化等研究近况进行了综述 ,同时也概述了凝胶多糖的分子修饰及其在医药、食品、化工等方面的应用。 The article reviewed the current situation of the research on curdlan, which is a new type microbial ex polysaccharide. The aspects include structure, property, biosynthesis, mutation,extraction and purify. The modification of curdlan and the applications were also covered in the paper.
