摘　　要： 真菌毒素是真菌在生长过程中产生的次级代谢产物,通过污染食品和农作物,进而危害人和动物的安全。本文综述了常见真菌毒素(黄曲霉毒素、赭曲霉毒素、单端孢酶烯族毒素、玉米赤霉烯酮、伏马菌素等)的污染现状与国内外对不同真菌毒素的限值标准以及检测真菌毒素的常用方法,为进一步加强真菌毒素污染的控制提供依据。 Mycotoxins are secondary fungal metabolite producer,which synthetize in different growth stage,may endanger health of people and animal.The article summarize the pollution state,the limit standard in different countries and the detection methods of mycotoxins such as aflation,ochratoxin,trichothdcenes,zearalenone,fumonisin and so on in different country and district,to pray for new idea for controlling measures for mycotoxin.
