摘 要: 测定了香蕉(Musa nana)果皮提取物对食品常见腐败菌的抑菌活性,探讨了高温处理和紫外照射对其抑菌活性的影响.结果表明:除青霉菌外,香蕉果皮提取物对所测试菌均有一定的抑制作用,对大肠杆菌和金黄色葡萄球菌的最小抑菌浓度M IC值为0.75 g.mL-1,对枯草芽孢杆菌的M IC值为0.50 g.mL-1,对白酵母和黄曲霉的M IC值为1.00 g.mL-1.高温和紫外照射对提取物抑菌活性几乎无影响. Antibacterial activity of banana peel extract on some food spoil bacteria and fungi were determined and effects of different factors such as high temperature and ultraviolet radiation on antibacterial activity were studied.The results showed that except Penicillium sp.,the banana peel extract can effectively inhibit the growth of some bacteria and fungi.The minimum inhibition concentrations(MIC) of banana peel extract on Escherichia coil and Staphylococcus aureus was 0.75 g·mL-1,0.50 g·mL-1 for Bacillus sub...
